Who will say NO NO to Cauliflower and Potato, i'll never. I can have potato and cauliflower in all the forms. U know, even my 1 year kid is much fond of this veggies. As cauliflower is a seasonal veggie, i'll not drive a week without this. Will prepare many dishes like kurma, fry, 65 using this cauliflower. So thought of posting the 1st post of cauliflower recipe.
INGREDIENTS
Cauliflower - 1 small floret
Cube sized boiled Potato - 2 Nos.
Chopped Onion - 2 Nos.
Chopped Tomato - 1 No.
Ginger Garlic Paste - 1 spoon (Optional)
Turmeric Powder - Pinch
Chilly Powder - 1 spoon
Corainder Leaf - 2 Twigs
Curry Leaf - 1 Twig
Mustard - 1 spoon
Oil - To Fry
Salt - To Taste
METHOD:
Clean the cauliflower floret, dip it in hotwater for 10 mins and drain it.
Keep a frying pan, heat a spoon of oil, add mustard. Once it splutters up, add chopped onion, ginger garlic paste, tomato, corainder leaf and curry leaf, saute it for 5 mins. Then add cauliflower along with turmeric powder, chilly powder and required salt. Allow it to boil by sprinkling water by closing the pan lid. Once it gets boiled and the excess water gets drained, add cube sized potatoes, mix with the cauliflower mixture, allow it to fry deeply by pouring oil on sides of the pan.
Note: Can also add peas along with this mixture. This can be used as a sidedish for Chappati and Roti.

Brinjal Fry

Hello Bloggers!!! Here is a recipe coming up from me after a long time - yes, it has been more than a week. Today's recipe is Brinjal Fry. Its my hubby's all time favorite. He'll like this even if i prepare for all the 7 days. When i tried this first, it wasnt much crispy but after my first try, it came out well and thought of posting this. So here comes.....
INGREDIENTS
Slited Brinjal - 1/4 kg
Chopped Onion - 2 Nos.
Chopped Tomato - 1 Nos. (Optional)
Sambar Powder - 1 spoon
Turmeric Powder - Pinch
Salt - To Taste
Oil - To fry
METHOD:
Take a frying pan, heat 2 spoons of oil, add chopped onion, saut it until it become translucent. Add chopped tomato, fry it until it mix nicely with fried onions. Then add sambar powder, turmeric powder and salt, fry it until the oil comes out. Then add slited brinjal, fry it by closing the pan with lid for 5 mins. Open take off the lid and allow it fry it in simmer until it reach crispy consistency.

Hey friends, its been almost a week i took a very small break due to my kids first birthday. Birthday went well and the members count was unexpected. :) So, thought of coming back with a rocking recipe. Lets go to it.
INGREDIENTS
Chopped Plantain Pith - 1 No.
Moong Dhall - Quarter cup
Chopped Onion - 2 No.
Chopped Tomato - 1 No.
Chilly Powder - 1 spoon
Mashed Ginger - Half Inch
Turmeric Powder - Pinch
Curry Leaf - 1 Twig
Coriander - 2 Twigs
Salt - To Taste
METHOD:
Take a pressure cooker, add all the items in ingredients and add a half glass of water. Pressure it for 7 mins. Keep a frying pan, heat a spoon of oil, add curry leaf, coriander leaf and mustard. Then add the pressured ingredients and keep in simmer until the excess water drains up.

Its my long time dream to prepare Vegetable Noodles. But i dont know the procedure to prepare it. So, i started to search some blogs and even i have bookmarked some of the vidoes in you tube. Finally my dream came true on last saturday. I used only simple veggies to make it. It was really yummy and tasty.
INGREDIENTS
Hakka Noodles - 200 g
Chopped Capsicum - 1 Cup
Chopped Cabbage - 1 Cup
Chopped Carrot - 1 Cup
Chopped Onion - 2 Nos.
Chopped Garlic - 5 Flakes
Pepper Powder - 2 or 3 spoons
Oil - 3 spoons
Salt - To taste
METHOD:
Take a vessel, pour 6 to 7 glasses of water allow it to boil along with a spoon of oil and pinch of salt. Once the water gets boiled, add Hakka Noodles and close the vessel with lid. After 6 to 7 mins, drain the noodles and keep aside. Keep a pan, heat 3 spoons of oil. Add chopped Onion adn garlic flakes, once the raw smell goes off, add the chopped veggies, saute it for 10 mins along with 3 spoons of pepper powder and required salt. Then add drained Hakka noodles with the sauted mixture gently. While mixing, be careful the noodles should not get mashed each other.

Once upon a time, "Avaraikkai" was my favorite veggie. But now, will run like a child when my hubby bought this veggie. The sad reason behind that is, one fine day, NO No No, 1 sad day, my hubby went to the market to buy groceries for that week and me adviced my hubby to get extra some grams of veggie as my FIL is visiting my home. He left home with the groceries list in which i didnt mention to buy Avairaikai as we bought that last week. Once he left home, my FIL (Father-in-law) came from his home town, with half kg of Avaraikkai as they use to get all types country veggies in cheaper rate with fresh looking. I was convincing me by saying, Ok. Lets prepare this at the weekend. After 30 mins time, my hubby came with a half kg of Avaraikkai :( I was shocked and he gave the explanation as he couldnt find 1 of the veggie in the list given by me, so he bought that as an alternate. Friends, just think, for 2 members, v had 1 kg of Avaraikkai :( So, not to waste that, i prepared the veggie for 3 times in a week which made to hate this and finally emptied it. So this was that sad story :(
INGREDIENTS
Avaraikkai - 1/4 kg

Grated Coconut - 2 Pieces

METHOD:
Take a vessel, Boil chopped avaraikkai, turmeric powder, chilly powder, salt by adding half glass of water. Once its boiled, drain the excess water and keep aside. Keep a frying pan, heat 3 spoons of oil. Then add mustard, once it splutters up, add chopped onion, tomato, corainder leaf, curry leaf, smashed garlic, saute it for 5 mins. Then add boiled avaraikkai and fry it with sauted items. Add grated coconut, 5 mins before switch off the flame.
Note: Avaraikkai can be cooked in pressure cooker or in the frying pan along with sauted items like Tomato, Onion, Garlic etc.

This is my first try which i copied from my fellow blogger Kurinji :) When i saw this recipe in her blog i was so tempted and was waited for weekend to try this. Fianlly, i tried this a week back, it came out very well and my hubby was enjoyed on tasting this new recipe. :D
INGREDIENTS
Bread slices - 6 pieces
Parry's Sugar - 1 cup
Water - 2 1/2 cups
Smashed Cinnamon - 1 No.
Oil - To fry
METHOD:
Keep a wide mouthened pan, pour water, sugar and smashed cardomon, allow it to cook until it reaches sugar syrup consistency. Keep the sugar syrup aside. Take a glass of water in a vessel, dip the bread slice and squeeze it immediately. Smash squeezed bread like a poori dough and make it as a golf-shaped balls. Pour required oil in a frying pan, deep fry the bread balls and put them in to sugar syrup. Dont disturb it for 1 hour and Serve in a bowl.

Basmathi Rice - 1 1/2 cup

Add pepper corns, fennel seeds, cinnamon, cardamon, bayleaf, ginger garlic paste, mint leaf, corainder leaf, chopped onion, saute it for 6 mins. Then add chopped tomato. Fry it until it mix up with the fried onion. Then add marinated chicken, add required water and partially close the lid. Once the pieces gets half-boiled, add rice. Mix it gently and add required water and salt. Close with the lid completely. Pressure it for 10 mins in simmer after a whistle. Serve with cucumber or onion raitha for more taste.

Take a vessel, pour 6 to 7 glasses of water allow it to boil along with a spoon of oil and pinch of salt. Once the water gets boiled, add Hakka Noodles and close the vessel with lid. After 6 to 7 mins, drain the noodles and keep aside. Keep a pan, heat 3 spoons of oil. Add chopped Onion adn garlic flakes, once the raw smell goes off, add the chopped veggies, saute it for 10 mins along with 3 spoons of pepper powder and required salt. Then add drained Hakka noodles with the sauted mixture gently. While mixing, be careful the noodles should not get mashed each other.

Hyacinth beans or Avaraikkai Poriyal
Once upon a time, "Avaraikkai" was my favorite veggie. But now, will run like a child when my hubby bought this veggie. The sad reason behind that is, one fine day, NO No No, 1 sad day, my hubby went to the market to buy groceries for that week and me adviced my hubby to get extra some grams of veggie as my FIL is visiting my home. He left home with the groceries list in which i didnt mention to buy Avairaikai as we bought that last week. Once he left home, my FIL (Father-in-law) came from his home town, with half kg of Avaraikkai as they use to get all types country veggies in cheaper rate with fresh looking. I was convincing me by saying, Ok. Lets prepare this at the weekend. After 30 mins time, my hubby came with a half kg of Avaraikkai :( I was shocked and he gave the explanation as he couldnt find 1 of the veggie in the list given by me, so he bought that as an alternate. Friends, just think, for 2 members, v had 1 kg of Avaraikkai :( So, not to waste that, i prepared the veggie for 3 times in a week which made to hate this and finally emptied it. So this was that sad story :(
INGREDIENTS
Avaraikkai - 1/4 kg
Chopped Onion - 2 Nos.
Chopped Tomato - 1 No.
Turmeric Powder - Pinch
Chilly Powder - 1 spoon
Salt - To Taste
Oil - to Fry
Grated Coconut - 2 Pieces
Corainder Leaf - 2 Twigs
Mustard - 1 spoon
Curry Leaf - 1 Twig
Smashed Garlic - 4 Nos.
METHOD:

Note: Avaraikkai can be cooked in pressure cooker or in the frying pan along with sauted items like Tomato, Onion, Garlic etc.

Bread Jamun
This is my first try which i copied from my fellow blogger Kurinji :) When i saw this recipe in her blog i was so tempted and was waited for weekend to try this. Fianlly, i tried this a week back, it came out very well and my hubby was enjoyed on tasting this new recipe. :D
INGREDIENTS
Bread slices - 6 pieces
Parry's Sugar - 1 cup
Water - 2 1/2 cups
Smashed Cinnamon - 1 No.
Oil - To fry
METHOD:
Keep a wide mouthened pan, pour water, sugar and smashed cardomon, allow it to cook until it reaches sugar syrup consistency. Keep the sugar syrup aside. Take a glass of water in a vessel, dip the bread slice and squeeze it immediately. Smash squeezed bread like a poori dough and make it as a golf-shaped balls. Pour required oil in a frying pan, deep fry the bread balls and put them in to sugar syrup. Dont disturb it for 1 hour and Serve in a bowl.

Participation Award !!!
A month before i have participated in the Rice Flakes event hosted by Kurinji Kathambam. So, as a blog beginner at that stage, i was in a bit confusion to send my Aval Upma recipe where i don't have my recipe pic embedded. With lot of worries (as i don't have the snap), I have sent the recipe for the event. Today, when i logged in to my blogger this morning, i was so surprised to see the Participation Award given by Kurinji. Chicken Briyani
My 1st recipe of this month :) This is the recipe which i know when i was newly married. But now when i think about my recipes, i use to feel like "Hmmmmm....... nee kooda recipe blog writer, paravalaye !!?? :)" Its all because 50% of my hubby's encouragment and 50% of my cooking passion. Eventhough am aware of this recipe from my school days, still am trailing behind to reach my mom's taste :( Ok friends, nothing much to anecdotes.
INGREDIENTS
Basmathi Rice - 1 1/2 cup
Chopped Onion - 4 Nos.
Chopped Tomato - 2 Nos.
Curry Leaf - 1 Twig
Mint Leaf - Handful
Corainder Leaf - Handful
Green Chilly - 5 Nos.
Cinnamon - 3 Nos.
Cardamon - 1 Nos.
Cloves - 6 Nos.

METHOD:
Keep a cooker, pour 3 spoons of oil and 2 spoons of ghee, allow it to heat. Add pepper corns, fennel seeds, cinnamon, cardamon, bayleaf, ginger garlic paste, mint leaf, corainder leaf, chopped onion, saute it for 6 mins. Then add chopped tomato. Fry it until it mix up with the fried onion. Then add marinated chicken, add required water and partially close the lid. Once the pieces gets half-boiled, add rice. Mix it gently and add required water and salt. Close with the lid completely. Pressure it for 10 mins in simmer after a whistle. Serve with cucumber or onion raitha for more taste.
