Hara Bara Kebab

     As soon as i saw this recipe in a famous cookery show, i was super excited to try this immediately for our evening snack. Since it has very basic ingredients! I started searching for the ingredients but i got nothing :( Poor me ! Do you think will i leave ?! No way, on our next grocery shopping, i picked all the ingredients without fail and finally prepared ! Now, its for your views... Tadaaaaa.....


ALL YOU NEED:
Spinach 1 cup
Besan/Kadalai Maavu 1 1/2 tblsp
Garam Masala 1/2 tsp
Fennel Seeds 1/2 tsp
Green Chilly 1 1/2
Potato 1 No.
Peas 1/2 cup
Ginger 1/2 inch
Sugar Pinch
Salt To Taste
Oil To Spray
METHOD:
     Pressure cook both potato and green peas by adding a pinch of salt. No problem even it get mashed. Now boil 2 cups of water with pinch of sugar (to retain the green color), add spinach, let it be boil just for a minute. Once done, drain the water and wash it immediately in cold water. Now take boiled green peas without water, spinach, ginger, green chilly in a blender, grind it to a paste. No adding water please! Transfer it to a wide bowl, now add the mashed potato, fennel seeds (this is my touch, not comes in original recipe), garam masala, besan flour. Mix well with required salt. Once done, grease both your palms with water and make te mixture into small lemon-sized balls. Flatten it gently.

     Now heat a tawa and sprinkle some oil, Place the kebabs gently, let it cook for 3 to 4 mins in medium flame, Turn it to the other side(again gently, there is a chance of breaking the shape)to cook. Let it be in flame for another 3 to 4 mins in medium flame. Don't use high flame, b'cos it will cook only the outer portion, the inner portion will remain uncook. Once done, you can see the nice brown coating. All done, its time to taste with a ketchup or Tamarind chutney !

Note: In original recipe, he'll add Amchoor powder too. Since it was not there at home, i skipped it.

Idlypodi Potato Fry

    Couple of days back prepared idly podi at home. Being a huge idly podi lover, started tasting it every hour/whenever i enters into the kitchen. Also, nowdays started eating with steamed rice by adding a spoon of ghee ( Mouthwatering now :P). For my lunch, planned to prepare some potato fry, at the same-time, since i got bored of usual potato fry, thought why not adding idly podi to the potato fry. There comes this crunchy fry...


ALL YOU NEED:
Boiled Potato 2 Nos.
Chilly Powder 1/2 spoon
Turmeric Powder 1 cup
Idly Podi 3 spoons
Salt To Taste
Oil 3 spoons

METHOD:
     Dice the boiled potatoes. Heat 2 spoons of oil in a pan, add the diced potatoes, add 1/2 spoon of chilly powder, pinch of salt and turmeric powder toss it well until it mix up with the oil. Toss it gently until its half roasted. Once done, add 2 or 3 spoons of idly podi by adding a spoon of oil. Toss well, until it becomes golden brown color and crunchy texture.

Note: This can be done using oven.

French Fries (Oven Style)

    Who will say NO to potato recipes that too if it comes to French fries. Surely am the one :P Yes, am a crazy fan of all potato recipe but when it comes to french fries, am bit down due to its plain taste and In my current location, i can buy french fries anywhere and anytime as we get Bhajji, Bonda in india. Its time long time plan to try this in oven. So, planned a day and tried it finally ! You can also check deep fried french fries Here.


ALL YOU NEED:
Potato 2 Nos.
Pepper Powder Pinch
Pizza Seasoning Pinch
Salt To Taste
Oil 1 spoon
METHOD:
     Peel the potato skin, Place in cold water for 5 mins and drain it completely. Make it as thin strips and place in a wide bowl. Now add a spoon of olive oil, salt, pepper powder and pizza seasoning. Mix until it coats the potato strips. Take the oven plate, cover it with aluminium foil. Now arrange the potato strips in the oven plate. Meantime preheat oven at 350 F. Once done, place the plate into the oven and let it be in same temperature for 30 to 35 mins. Keep tossing using fork inetween some 10 to 15 mins. Serve hot with tomato ketchup.

Appalam Kootu

    This was one of my BIG most favorite dish among my mom's preparation. The best part of this was, i love the appalam/pappad which was completely soaked in the bengal gram kootu. Whenever my mom prepares this dish, am the only person who takes empty all the soaked appalam and leave it as plain bengal gram kootu :P But some point of time, dont know why she stopped preparing (may be am eating all the appalam without leaving it for others :P) But, after loooooooooong gap me somehow recollected the recipe and prepared it for our lunch time and now its for your views.


ALL YOU NEED:
Soaked Bengal Gram 1 cup
Diced Potato 1/2 cup
Chopped Onion 1 No.
Chopped Tomato 1 No.
Turmeric Powder Pinch
Green Chilly 2 Nos.
Pappad 3 Nos.
Ginger 1/4 inch
Water 1 cup
Salt To taste
To Temper:
Coriander Leaf 2 Twigs
Curry Leaf 1 Twig
Cumin Seeds 1/2 spoon
Red Chilly 1 No.
Mustard 1 spoon
Oil 2 spoons

METHOD:
    Pressure cook all the ingredients under "All you Need"(except pappad) for about 3 to 4 whistles. Once the pressure releases, heat of spoon of oil in a pan. Add mustard and then cumin seeds. Now add chopped curry leaf, coriander leaf and red chilly (Optional), saute it well. Now pour the pressure coked items and let it get oil for 5 to 6 mins in medium flame and adjust the salt if required. Once done, put off the flame. Just a 10 mins efore your meal add the roken pappa/appalam, give hard stir and serve hot.

Note: You can also add grated coconut during your tempering.

Potato Chips

     I am a big fan of Potato chips. Whenever i feel like munching, i immediately buy a store bought packet which all time have a special taste when compare to the home made chips. But here in my new location, i can no where find "Potato Chips" in stores. I am totally disappointed. With that disappointment note, my carving day for potato chips has come, so without any delay, i thought of preparing at home but to my surprise there were only 3 potatoes that too in small tiny potato. Do you think will i leave it ??!! Noway, finally prepared the chips and now comes for your views as well :)

                                   

ALL YOU NEED:
Potato 3 Nos.
Chilly Powder 1/4 spoon
Salt 1/4 spoon
Oil To Deep fry


METHOD:
     Wash and Peel the potato skin. Make it as thin slices and put in a cold water for 15 mins. After 15 mins, drain it in a tissue paper. Let it be for 5 mins. Meantime, heat oil for deep frying. Once the slices get drained, deep fry the potato slices in batches and place it in tissue paper. Once you are done with deep frying, add chilly powder and salt. Toss it without breaking the shape and Enzoy !!!!

Aloo Paratha

     It was my saviour during my pregancy time. Yes, most of the days i dont feel like to cook due to morning sickness. So, near my house, there was a northindian tiffen stall where i'll get these paratha that too very hot with all perfect side dish. From that time, i want to try this at home. Now i got the time after 3 years :P To e frank, my first try was total disaster but this time Yiiippppeee.... i somehow got the perfect shape i guess ! Here comes for your views !

       

ALL YOU NEED:
Wheat Flour 2 cups
Water Required
Salt Required
Oil 1 spoon

For Stuffing:
Boiled Potato 3 Nos.
Chopped Onion 1 No.
Chopped Green chilly 2 Nos.
Chopped Ginger 1/2 inch
Chopped Garlic 6 Nos.
Turmeric Powder Pinch
Salt To Taste
Oil 1 spoon
METHOD:
     Take a wide pan, ad wheat flour and required salt. Knead it to a perfect dough by adding required water. Once done, add a spoon of oil and again knead and allow it to sit for a while.

    Now keep a pan, add a spoon of oil, once its gets heated add chopped onion, chopped green chillies, chopped garlic, chopped ginger and do sauting along with pinch of salt. Now add mashed potato, give hard stir until it mix well with the onions. Adjust with salt. Don't add water. Let it cool down. Apply oil on chapathi roller, take a ball shaped dough, roll it partially, apply oil/flour if it sticks to the roller. Now take a small ball shaped potato mixture. Place it in the centre and cover it with the dough. Now again roll it to paratha shape. Once done, place it on a tawa, add oil to it sides and toss it until it gets cooked. Now serve hot with cucumber raitha.

Simple Potato Fry

     Who say NO to potato ??!!! Surely am NOT. Whenever am running out of veggie for my lunch, i'll blindly choose this to prepare some sidedish for my Sambar or Keerai rice. This is the most easy breezy veggie which can be mould/prepared in any form. If you want to taste it as spicy roast or in simple potato fry which suits puli kuzhambu, it will give heavenly taste in any form. You wont believe me, i like to eat simple pressure cooked potato too :P From this you can understand my craze towards potato. Now coming to this version, in short, this is a spicy version which i preapred using store-bought sambar powder without adding any masala items. Here comes the simple spicy version which suits evern roti too.........


ALL YOU NEED:
Potato 1/4 kg
Chopped Onion 2 Nos.
Chopped Tomato 1 No.
Sambar Powder 1 spoon
Turmeric Powder Pinch
Mustard 1 spoon
Salt Pinch
Oil 1 spoon

METHOD:
     3/4'ly pressure cook potato and peel the skin and dice it. Now heat a spoon oil in a pan. Add mustard, once it splutters, add chopped onion with a pinch of salt. Do sauting for 5 minutes. Now add on tomato, turmeric powder, sambar powder (I used Sakthi Masala Sambar Powder), do fine sauting until oil oozes out. Now pour a glass of water and bring it boil, now add diced potato, adjust with salt and do fine sauting until the masala coats the potato. Put off the flame, now serve with sambar rice or keerai rice.

French Fries

     In general, will not say NO to any potato recipes. But the only potato snack which i like very little is FRENCH FRIES... The reason is, only bcos of its very plain taste eventhough i add some seasoning. But the contradictory part was, whenever we go to movie park, my H will order this as his Main course :P, only next comes the Pop-corn to munch. Since, this has very simple preparation method, i wont prefer buying it outside. So, i bookmarked this recipe very long time to prepare at home. Finally during one of our weekend evening i prepared this for my H and served hot with spicy tomato sauce. My kid and H was enjoyed at max. That's the highlight :)


ALL YOU NEED:
Big Potatoes 4 Nos.
Pepper Powder 1 spoon
Salt Pinch
Oil To Deep fry

METHOD:
     Peel the skin of those 4 pototoes and cut them like a strips. Take cool water in a wide bowl and soak the potato strips into it. Let it sit for some 5 mins. Now take out, drain it for a while. Paralley heat required oil for deep frying. Once oil gets heated, fry the potato strips in batches until it reach half crispy consistency and place it in a bowl. Now add the seasonings i.e. salt and pepper powder and serve hot with Tomato sauce.

Potato Masaal III

     Who will say NO to Potato dishes. Noone will tell in my family. U know, even i like to have plain boiled Potato all time :P Whenever if we forced to go Veg hotel for dinner, my all time blind option will be Masala Dosai! then i'll move on to some Tandoori options. Even my kid is accomponying me nowadays by ordering the same Dosa :P From this you can understand, my evergreen love towards this recipe. Dont know why i left such a huge gap since i last prepared. So, finally prepared this on one sunday breakfast and same my Masala Dosai. Lil one being a picky eater, u know how she was having... OMG! Me and my H was in big surprise... He he he... Here comes our favorite most favorite recipe.... U can check Version 1 and 2, HERE and HERE :)


ALL YOU NEED:
Boiled Potato 4 Nos.
Boiled Peas 1 cup
Sliced Onion 2 Nos.
Green Chilly 4 Nos.
Chopped Garlic 1 Bulb/td>
Chopped Ginger 1 inch
Corainder Leaf 2 Twigs
Turmeric Powder Pinch
Curry Leaf 1 Twig
Mustard 1 spoon
Salt To Taste
Oil 2 spoons


METHOD:
     Heat a non-stick pan with 2 spoons of oil. Add Mustard, once it splutters. Add chopped onion, chopped green chillies, chopped garlic, chopped ginger, curry leaf, corainder leaf and pinch of salt, do a sauting until onion becomes thin. Now add on the boiled and mashed potato, boiled green peas, turmeric powder and now pour 1/2 cup of water and adjust with salt. Allow it to boil for a while until raw smell goes of and it becomes thick. Now garnish with chopped corainder leaf.

Potato Bengal Gram Kurma

    Instead of naming it as "Potato Bengal Gram Kurma", i should name it as "My MIL's kurma". Whenever my MIL prepare chapati at home, blindly i can say the side dish will be either this or Potato Masala. Think this is her most favorite curry. I should be happy atleast she is helps me in cooking since am an office goer. My big thanks to her. Also, i should say my second thanks, because of her i excavated a new recipe and i got a recipe/content to fill this post :P To be frank, i should say, this is one of the best combo for chapati when it is tasted as hot pot. Just me gave a try one day. That's excavated day's clicks and Steps for your views. :)


ALL YOU NEED:
Chilly Powder 1 spoon (Optional)
Coriander Leaf 2 Twigs
Fennel Seeds 1 spoon
Curry Leaf 1 Twigs
Mustard 1 spoon
Salt To Taste
To Pressure cook
Turmeric Powder Pinch
Bengal Gram Handfull
Green Chilly 4 Nos.
Potato 5 Nos.
Salt Pinch
Water 1 glass
To Roast & Grind
Small Tomato 2 Nos.
Fried Gram 1 1/2 spoon
Cinnamon Pinch
Coconut 8 pieces
Onion 2 Nos.
Ginger 1 inch
Garlic 8 cloves
Cloves 4 Nos.
Oil 1 spoon
METHOD:
     Pressure cook items under "To Pressure cook" for 5 minutes in simmer. Roast & Grind the ingredients under section "To Roast & Grind". Let both sit for a while. Keep a pan, add a spoon of oil. Add mustard, let it splutters. Now add curry leaf, coriander leaf and fennel seeds. Its time to pour the grinded items and give a stir. Now mash the pressure cooked potato and add it to the pan. Give a mix. Now pour the pressure cooked bengal gram which stays in the cooker. Give a hard stir. If it is not so spicy, add a spoon of chilly powder. Adjust with salt. Add water if it too thick consistency. Allow it to boil until the raw smell goes off.

Potato Podimass

INGREDIENTS
Boiled Potato - 4 Nos.
Chopped Onion - 2 Nos.
Chopped Green chilly - 3 Nos.
Chopped Curry Leaf - 1 or 2 twigs
Coriander Leaf - 2 or 3 twigs
Turmeric Powder - Pinch
Mustard - 1/2 spoon
Salt - To taste
Oil


METHOD:
     Smash the boiled potato with turmeric powder and keep aside. Keep pan, add a spoon of oil. Add mustard, allow it to splutter. Add onion, curry leaf, coriander leaf, green chillies and required salt (which makes, onion to cook soon). Once the onion turns into golden brown color, add the smashed potato and saute with the onion mixture without pouring water. Pour oil on sides of the pan, to make the podimass tasty and bit crispy.

Note: This dish can be used as the stuff for "Aloo Parata" and "Bonda".

Now coming to this version, in short, this is a spicy version which i preapred using store-bought sambar powder without adding any masala items. Here comes the simple spicy version which suits evern roti too.........


ALL YOU NEED:
Potato 1/4 kg
Chopped Onion 2 Nos.
Chopped Tomato 1 No.
Sambar Powder 1 spoon
Turmeric Powder Pinch
Mustard 1 spoon
Salt Pinch
Oil 1 spoon

METHOD:
     3/4'ly pressure cook potato and peel the skin and dice it. Now heat a spoon oil in a pan. Add mustard, once it splutters, add chopped onion with a pinch of salt. Do sauting for 5 minutes. Now add on tomato, turmeric powder, sambar powder (I used Sakthi Masala Sambar Powder), do fine sauting until oil oozes out. Now pour a glass of water and bring it boil, now add diced potato, adjust with salt and do fine sauting until the masala coats the potato. Put off the flame, now serve with sambar rice or keerai rice.

French Fries

     In general, will not say NO to any potato recipes. But the only potato snack which i like very little is FRENCH FRIES... The reason is, only bcos of its very plain taste eventhough i add some seasoning. But the contradictory part was, whenever we go to movie park, my H will order this as his Main course :P, only next comes the Pop-corn to munch. Since, this has very simple preparation method, i wont prefer buying it outside. So, i bookmarked this recipe very long time to prepare at home. Finally during one of our weekend evening i prepared this for my H and served hot with spicy tomato sauce. My kid and H was enjoyed at max. That's the highlight :)


ALL YOU NEED:
Big Potatoes 4 Nos.
Pepper Powder 1 spoon
Salt Pinch
Oil To Deep fry

METHOD:
     Peel the skin of those 4 pototoes and cut them like a strips. Take cool water in a wide bowl and soak the potato strips into it. Let it sit for some 5 mins. Now take out, drain it for a while. Paralley heat required oil for deep frying. Once oil gets heated, fry the potato strips in batches until it reach half crispy consistency and place it in a bowl. Now add the seasonings i.e. salt and pepper powder and serve hot with Tomato sauce.

Potato Masaal III

     Who will say NO to Potato dishes. Noone will tell in my family. U know, even i like to have plain boiled Potato all time :P Whenever if we forced to go Veg hotel for dinner, my all time blind option will be Masala Dosai! then i'll move on to some Tandoori options. Even my kid is accomponying me nowadays by ordering the same Dosa :P From this you can understand, my evergreen love towards this recipe. Dont know why i left such a huge gap since i last prepared. So, finally prepared this on one sunday breakfast and same my Masala Dosai. Lil one being a picky eater, u know how she was having... OMG! Me and my H was in big surprise... He he he... Here comes our favorite most favorite recipe.... U can check Version 1 and 2, HERE and HERE :)


ALL YOU NEED:
Boiled Potato 4 Nos.
Boiled Peas 1 cup
Sliced Onion 2 Nos.
Green Chilly 4 Nos.
Chopped Garlic 1 Bulb/td>
Chopped Ginger 1 inch
Corainder Leaf 2 Twigs
Turmeric Powder Pinch
Curry Leaf 1 Twig
Mustard 1 spoon
Salt To Taste
Oil 2 spoons


METHOD:
     Heat a non-stick pan with 2 spoons of oil. Add Mustard, once it splutters. Add chopped onion, chopped green chillies, chopped garlic, chopped ginger, curry leaf, corainder leaf and pinch of salt, do a sauting until onion becomes thin. Now add on the boiled and mashed potato, boiled green peas, turmeric powder and now pour 1/2 cup of water and adjust with salt. Allow it to boil for a while until raw smell goes of and it becomes thick. Now garnish with chopped corainder leaf.

Potato Bengal Gram Kurma

    Instead of naming it as "Potato Bengal Gram Kurma", i should name it as "My MIL's kurma". Whenever my MIL prepare chapati at home, blindly i can say the side dish will be either this or Potato Masala. Think this is her most favorite curry. I should be happy atleast she is helps me in cooking since am an office goer. My big thanks to her. Also, i should say my second thanks, because of her i excavated a new recipe and i got a recipe/content to fill this post :P To be frank, i should say, this is one of the best combo for chapati when it is tasted as hot pot. Just me gave a try one day. That's excavated day's clicks and Steps for your views. :)


ALL YOU NEED:
Chilly Powder 1 spoon (Optional)
Coriander Leaf 2 Twigs
Fennel Seeds 1 spoon
Curry Leaf 1 Twigs
Mustard 1 spoon
Salt To Taste
To Pressure cook
Turmeric Powder Pinch
Bengal Gram Handfull
Green Chilly 4 Nos.
Potato 5 Nos.
Salt Pinch
Water 1 glass
To Roast & Grind
Small Tomato 2 Nos.
Fried Gram 1 1/2 spoon
Cinnamon Pinch
Coconut 8 pieces
Onion 2 Nos.
Ginger 1 inch
Garlic 8 cloves
Cloves 4 Nos.
Oil 1 spoon
METHOD:
     Pressure cook items under "To Pressure cook" for 5 minutes in simmer. Roast & Grind the ingredients under section "To Roast & Grind". Let both sit for a while. Keep a pan, add a spoon of oil. Add mustard, let it splutters. Now add curry leaf, coriander leaf and fennel seeds. Its time to pour the grinded items and give a stir. Now mash the pressure cooked potato and add it to the pan. Give a mix. Now pour the pressure cooked bengal gram which stays in the cooker. Give a hard stir. If it is not so spicy, add a spoon of chilly powder. Adjust with salt. Add water if it too thick consistency. Allow it to boil until the raw smell goes off.

Potato Podimass

INGREDIENTS
Boiled Potato - 4 Nos.
Chopped Onion - 2 Nos.
Chopped Green chilly - 3 Nos.
Chopped Curry Leaf - 1 or 2 twigs
Coriander Leaf - 2 or 3 twigs
Turmeric Powder - Pinch
Mustard - 1/2 spoon
Salt - To taste
Oil


METHOD:
     Smash the boiled potato with turmeric powder and keep aside. Keep pan, add a spoon of oil. Add mustard, allow it to splutter. Add onion, curry leaf, coriander leaf, green chillies and required salt (which makes, onion to cook soon). Once the onion turns into golden brown color, add the smashed potato and saute with the onion mixture without pouring water. Pour oil on sides of the pan, to make the podimass tasty and bit crispy.

Note: This dish can be used as the stuff for "Aloo Parata" and "Bonda".
