Brinjal Fry

Hello Bloggers!!! Here is a recipe coming up from me after a long time - yes, it has been more than a week. Today's recipe is Brinjal Fry. Its my hubby's all time favorite. He'll like this even if i prepare for all the 7 days. When i tried this first, it wasnt much crispy but after my first try, it came out well and thought of posting this. So here comes.....
INGREDIENTS
Slited Brinjal - 1/4 kg
Chopped Onion - 2 Nos.
Chopped Tomato - 1 Nos. (Optional)
Sambar Powder - 1 spoon
Turmeric Powder - Pinch
Salt - To Taste
Oil - To fry
METHOD:
Take a frying pan, heat 2 spoons of oil, add chopped onion, saut it until it become translucent. Add chopped tomato, fry it until it mix nicely with fried onions. Then add sambar powder, turmeric powder and salt, fry it until the oil comes out. Then add slited brinjal, fry it by closing the pan with lid for 5 mins. Open take off the lid and allow it fry it in simmer until it reach crispy consistency.
