Moong Dhall Sambar

     If you need my frank opinion about this recipe, I LOVE its smell but dont feel like preparing it. Not because of its taste, its b'cos it belongs to "Sambar Family" and at the same time I should call this recipe as "Aabathpanthavan". Much Contradictory is it??!! Yes, whenever none of the sidedish strikes my mind for breakfast or dinner, will prepare this blindly. Moreover, this will not consume much time. We can prepare this in Max of 20 mins. Here comes my Aabathpanthavan recipe for your views...

ALL YOU NEED
Moong Dhall - Handfull
Chopped Onion - 2 Nos.
Chopped Tomato -1 No
Sambar Powder - 1 spoon
Turmeric Powder - Pinch
Grated Coconut - 1/4 cup
Salt - To Taste

To Garnish:
Oil - To Garnish
Mustard - 1/2 spoon
Curry Leaf - 1 Twig
Coriander Leaf - 2 Twigs
Cloves - 4 to 5 Nos.
Cinnamon - 1/2 inch
Fennel Seeds - 1 spoon


METHOD:
     Pressure cook Moong Dhall and keep aside. Keep a pressure pan, heat a spoon of oil, allow mustard to splutters. Add chopped onion, saute it for 2 mins, then add cinnamon, cloves, curry leaf, coriander leaf and add turmeric powder, sambar powder and chopped tomato, fry it for 5 mins until oil oozes out. Then
pour the pressure cooked Moong Dhall, do hard stir with the sauted mixture. As a final touch, add grated coconut and fennel seeds and pressure it until 2 whistles.

Note:You can also pressure cook in a single stretch by adding all items under "All you need" except Grated Coconut and garnishing can be done later. This will cut-down the cooking time much. But taste will be less.

Drumstick Leaf Poriyal

     I am a big fan of all "Greens" whereever i'll see Fresh and Greeny Greens, will run behind like a Devil all time. When it comes to "Drumstick", i cant control my happiness(!). I love Drumstick a lot. I know to prepare very few recipes by using Drumstick. Today planned to post "Drumstick Poriyal" which is most healthiest among the Greens.

INGREDIENTS
Cleaned Drumstick Leaf - 1 bowl
Urad Dhall - 1 spoon
Toor Dhall - 1/4 cup
Chopped Onion - 2 Nos.
Red Chilly - 3 to 4 Nos.
Jeera - 1/4 spoon (Optional)
Grated Coconut - 1/4 cup
Salt - To taste
Oil - to garnish


METHOD:
     Pressure cook Toor Dhall with 3 whistle and keep aside. Keep a pan, heat a spoon of oil. Add Urad dhall, Jeera, chopped onion and crushed red chillies, saute it until raw smell goes off. Add drumstick leaf, mix it well with the sauted mixture. Allow to cook by not adding water. Before you put off the flame, add pressure cooked Toor Dhall and grated coconut, do mild sauting by not breaking the Dhall shape. Serve hot as healthy side dish. Make sure, NOT to over cook the green, as it will emit bitter taste. You can have this as side dish or just before your lunch as soon as it is ready.

Note: You can also cook by not adding Toor Dhall. But i cant compromise Toor Dhall at any cost :)

Wheat Oats Dosai

     I used to buy "Quaker Oats" for my kid to make Porridge for her evening snack. But she is not interested to taste it. As she doesnt like, i had some left out Oats. I got NO idea on how to use the left out ones. One day, i was running out of Dosa batter for our dinner. Suddenly my 6th sense felt of left out Oats, by not considering the taste blindly added 2 cups of Oats and 1 cup of wheat flour to the batter. I was totally in dread and waiting for the outcome. OMG !!! I was like flying, Yes, Wheat Oats Dosai was scrumptious :) Thank god, who solved my problem and saved me from my Hubby :P Here comes my "Savior" dish ! He he... Oops! Another Problem :( What should i name this dish ?? Somehow, name it as mentioned above. Really struggled gals :)

INGREDIENTS
Idly Dosa Batter - 2 cups
Wheat Flour - 2 cups
Oats - 1 cup
Salt - Required
Water - Required amount


METHOD:
     Take a wide bowl, add wheat flour and oats together along with salt. Mix it well. Pour required amount of water and make sure, it should not form any lumps. Then add Idly Dosa Batter to it. Mix it well. If required, add salt in between. Now the batter is ready and prepare it as Dosai in Dosa Pan. I enjoyed this recipe with Instant Chutney. You can also add chopped onion, green chilly to the batter, which really add more taste.

Instant chutney

    This is an another recipe looted from my colleague. I should say, its the Best chutney for Office goers which can be prepared within 5 minutes with simple inhouse ingredients. Most of the time, this will be my side dish for dinner or breakfast. My mom got a policy to prepare each and every dish in perfect way from grinding till garnishing, doesnt matter how complicated it is and will not compromise any simple ingredients. Moreover, she will not prefer simple and quick dish which can be prepared less than 10 minutes as she got a mind set that it will not taste much, but she is not the exception infront of this taste :D Yes, finally she grabbed this simple tastiest recipe from me. Most interesting and happiest thing is, this is the FIRST recipe which i thought her... Hurray !!!!!! :)

INGREDIENTS
Chopped Onion - 1 No.
Red Chilly - 3 or 4 Nos.
Coconut pieces - 1/4 cup
Tamarind - big gooseberry sized
Salt - To taste
Oil - To Garnish
Curry Leaf - 1 Twig
Mustard - 1/2 spoon


METHOD:
     Grind chopped onion, tamarind, red chillies, coconut pieces all together along with required salt. DONOT add much water to it. Garnish with mustard and curry leaf. Serve with Idly or Dosai. OMG ! only 2 lines, sooooo simple :)

Egg Pepper Fry

     I want to post this recipe immediately as this is my long time drafted post, so planned to post it yesterday, Suddenly when i checked my recipe count, Hah ! its 150!! How i can leave it so simple. So, started my browsing session to create an image. At last created a perfect text/image and the auspicious time (!) has come to post it.


    Here is the note behind this recipe... As i mentioned in all my EGG related post, i hate boiled Eggs. Still, like to try some different recipes using Boiled Egg. I know two receipes using Boiled Eggs. One is "Egg Thokku" and another one is this. When i tried this first during my early marriage days, i just felt the raw smell of the added ingredients. So, i decided not to prepare this anymore but suddenly when i checked my cookery book recently, this recipe got flashed and tempted me to prepare. so, try this for the second time only using 2 Boiled eggs. OMG!! i got my mom's taste. Hurray !!!!!!! :) Here comes my another boiled egg recipe.

INGREDIENTS
Boiled Egg - 2 Nos.
Onion - 2 Nos.
Garlic - 3 cloves
Tomato - 1 No.
Pepper corns - 1 spoon
Coriander
Chilly Powder - 1/2 spoon
Turmeric Powder - Pinch
Salt - To Taste
Mustard - 1/2 spoon
Sessame Oil - To garnish


METHOD:
     Grind Onion, pepper corns, garlic, tomato as a thick paste and keep aside. Keep a pan and heat a spoon of oil. Allow mustard to get splutters. Then pour the grinded items, saute it along with turmeric powder and required salt, until the raw smell goes off. If you need more kaaram, add chilly powder. It will take more time as we have grinded raw onions & garlic. DONOT add water at any cost. Once the raw smell goes off, slit the boiled egg and add it to the mixture. Fry until the white part of egg coated well with the sauted mixture. You can taste it with Hot steamed rice and as a side dish for Rasam, Roti etc.

Toor Dhall Chutney/Thuvayal

     When i dont feel like preparing Gravy or Side dish for my lunch, will blindly go for this Thuvayal/chutney as it will act as "THE BEST" all rounder as Gravy as well as a side dish. I learnt this recipe from my mom which she use to prepare in a simple form and i should said, she is a good in preparing this. But recently when i went to my aunt's house, my aunt prepared it for me in a different method which had a "Heavenly Taste". Yes, she add so many ingredients for that delicious outcome. Now, My aunt become BEST in preparing this. Nowadays, my mom use to prepare this in my aunt's method. Here comes my aunt's method....

INGREDIENTS
Toor Dhall - 1/2 cup
Chopped Onion - 1 or 2 Nos.
Chopped Tomato - 1 No.
Red Chilly - 2 Nos.
Green Chilly - 1 or 2 Nos.
Cumin Seed - 1/2 spoon
Curry Leaf - 1 twig
Corainder Leaf - 2 Twigs
Grated Coconut - 1/2 cup
Tamarind - Small gooseberry size
Salt - To taste
Oil - To fry


METHOD:
     Keep a pan and heat a spoon of oil. Add all items under "Ingredients" section 1 by 1 except coconut. Saute it until raw smell goes. Allow it to cool for 5 mins. Then grind the sauted mixture along with grated coconut. Add required salt in between. Hmmm....... I can feel the smell now. Its soooooooo easy.

Note:Dont add much water, it will spoil the taste for sure.

Dish, which tempted me !

     During one of my working day, went to food court with my own girls gang to have my lunch. As soon as i entered i was attracted by some non-veg dish smell which was ruining the entire food court, myself and my friends were in big discussion by finding the name. After sometime, we got distracted and having our home made food. Suddenly the smell again comes from my nearby table. (OMG! Its not leaving me...) Kept our brought food untouched, again our discussion started for Dish name hunting :P for a lllllloooooooonnnnnngggggggg time (Thank god ! noone forced us to go out) Finally, somehow we have concluded that it is Noooooooo............. will not reveal :) Guess from my Ingredients :P You wont believe me, if i got the below ingredients, i would have prepared it immediately and tasted. So much it tempted me. I was waiting for my office time gets over, rushed to my home and prepared this dish and enjoyed at the max. So kiddish is it ?? Ok gals, I can't keep up my Surprise, Here we go !!! :P

INGREDIENTS
Store bought Parota - 5 Nos.
Eggs - 5 Nos.
Onion - 4 Nos.
Tomato - 2 Nos.
Slited Green Chillies - 2 Nos. (Optional)
Chopped Garlic - 6 cloves
Turmeric Powder - 1 spoon
Chilly Powder - 1 spoon
Pepper Powder - 1 spoon
Salt - To taste
Oil - 3 spoons
Non-Veg Gravy - 1/4 cup (Preferrably Chicken/Mutton)
Curry Leaf - 1 Twig
Mint Leaf - 1 Twig


METHOD:
     Cut the Parota into very small pieces and keep aside. Keep a pan, heat 2 spoons of oil. Add chopped onion, fry it until it turns beach sand color (!)(Why always telling "Golden brown", just for a change :P). Add chopped garlic along with tomato. Fry it for more than 5 mins, untill oil oozes out. Then pour the egg along with turmeric powder, chilly powder and salt. Leave it untouched for 2 mins by closing the pan. So, that egg will not stick to the pan, while sauting it. Then add pepper powder, parota pieces, mix well with the egg mixture for 5 mins atleast. Few minutes before you put off the flame, add non-veg gravy, curry leaf and mint leaf. Now the Surprise dish - "EGG PAROTA" is ready for serving :) Smelling like Heaven is it ? :)

Potato Carrot Bonda

     One day as i didnt have veggies (for sidedish) available for lunch thought of preparing some fritters. So, treasure hunted my fridge and found some left out Bengal Gram flour which is sitting untouched for more than couple of weeks. So took that and found 2 veggies - Carrot and Potato. So decided to prepare some fritters using that and the final outcome was "Potato + Carrot Bonda", which becomes my Hubby's much much favorite one. I wondered even me kid enjoyed it very much. Here comes my Kid favy fritters.


INGREDIENTS
Potato Podimas - 2 cups
Bengal Gram flour - 1 cup
Corn Flour - 3 spoons
Food color - Pinch
Red Chilly Powder - 2 spoons
Salt - Required
Oil - To Deep Fry


METHOD:
     Make potato + carrot podimass as small round balls and keep aside. Take a wide pan, add Bengal gram flour, Corn Flour, Food color, Red chilly powder and required salt, mix all the ingredients by adding required water. Make sure, you wont add much water. Parallely, heat a fry pan with required amount of oil for deep frying. Once the oil gets heated. Take the potato + carrot podimass balls and dip completely into the fritter mixture. Then place it slowly into the oil, allow it to deep fry nearly for 5 mins. Now, tasty Potato+Carrot Bonda is ready !


Note:I added grated carrots along with the Potato Podimass while preparing.

Oil - To Deep Fry


METHOD:
     Make potato + carrot podimass as small round balls and keep aside. Take a wide pan, add Bengal gram flour, Corn Flour, Food color, Red chilly powder and required salt, mix all the ingredients by adding required water. Make sure, you wont add much water. Parallely, heat a fry pan with required amount of oil for deep frying. Once the oil gets heated. Take the potato + carrot podimass balls and dip completely into the fritter mixture. Then place it slowly into the oil, allow it to deep fry nearly for 5 mins. Now, tasty Potato+Carrot Bonda is ready !


Note:I added grated carrots along with the Potato Podimass while preparing.
