Eggless Blueberry Muffin

     In general, our weekdays breakfast will be like Cornflakes, Muffins, Breads etc... Mostly like instant or No cook dishes. So, just not to spend money on muffins, planned to make it at home that too EGGLESS. So, got some recipes from my co-bloggers page like Carrot Muffins, Vanilla Muffins. In that way, recently found this recipe from Raks kitchen >> Eggless Blueberry Muffins. Immediately bought a pack of fresh organic blueberry and tried this.


ALL YOU NEED:
Maida 1 cup
Blueberry 3/4 cup
Vanilla Essence 1 tsp
Baking Powder 3/4 tsp
Baking Soda 1/4 tsp
Corn Flour 2 Tblsp
Sugar 3/4 cup
Milk 3/4 cup
Salt Pinch
Oil 1/2 cup
METHOD:
     Preheat oven to 350 F. Sieve all dry ingredients like Maida, Baking Powder, Baking Soda and Corn flour. Transfer it to a wide bowl. Now add all the wet ingredients one by one such as Oil, milk and essence, along with sugar and salt. Mix well without any lumps. As a final touch, add blueberries. Stir well. Now line the muffin tray with liners. Fill the 3/4 liner with the batter. Once done, bake it for 20 to 25 mins. Just before 5 mins, you take out from the rom, apply some join on top of the muffin. Just to avoid the dryness.

Baked Veggie Pasta

     Nowadays me started liking this pasta in any form. Due to that, my excavation also started by surfing my cobloggers space. When i was surfing for some pasta recipe for our evening snack, this grabbed my attention. Immediately checked my fridge for the ingredients. How lucky me ! I got all the ingredients and immediately tried for our evening snack. Now its for your views.


ALL YOU NEED:
Pasta 1 cup
Tomato chilly sauce 5 tsps
Cheddar Cheese 1/2 cup
Bread crumbs 4 tsp
Mixed Veggies 1/2 cup
Olive Oil 4 tsp
Herbs 2 tsp
Salt To Taste
METHOD:
     Cook pasta along with oil and pinch of salt. Drain it. Now transfer it to a wide bowl, add salt, cheese (you can use mozzarella cheese too) tomato chilly sauce, mixed veggies (i used, carrot, capsicum, onion and tomato) and a spoon of bread crumbs. Give a mix. Now take the muffin tin, grease with oil and dust it with bread crumbs. Now fill it with the pasta mixture and sprinkle some bread crumbs and spray some olive oil. Once done, place it in the 350 F preheated oven. Bake it for 20 mins, till the bread crumbs turns golden brown. Let it cool and serve hot. Make sure there is a chance of breaking the cup shape while you are scooping it out.

Note: You can also use Mozzarella cheese.

Eggless Carrot Muffin

     Till date, me tried so many cake versions but never tried muffins at home as i dont have muffin tin at home and even me was postponing the day to buy the tin. Finally saw a muffin tin for cheaper rate, me grabbed it. Immediately me tried this eggless carrot muffin by the next day and the recipe is mentioned below


ALL YOU NEED:
Maida 1 cup
Vanilla Essence 1 tsp
Grated Carrot 1/2 cup
Baking Powder 1 tsp
Baking Soda 1/2 tsp
Yogurt 1 cup
Sugar 3/4 cup bit less
Milk 1/4 cup
Salt Pinch
Oil 1/4 cup
METHOD:
     Preheat oven to 375 F. Sieve maida, baking powder, baking soda and place it a wide bowl. Now add sugar and salt, mix all the wet ingredients for 5 mins. Now add grated carrot, vanilla essence, yogurt, milk and oil. Stir well without any lumps and until all the mixture mix up well. Now take the muffin tray, line up with muffin cups, fill 3/4 of the cup with the batter. Place it in the oven and bake it for 20 mins.

Chilly cheese toast

     As I told in my previous post on bread snack, I found this recipe too, while googling which is a very easy and simple toast which can be prepared using in-house ingredients. If taste heavenly only when we eat it right from oven (!) I used to prepare this whenever i feel like munching any snack. So, friends why don't you try and let me know your feedback as well.


ALL YOU NEED:
Bread Slices 3 Nos.
Chopped Green Chilly 2 Nos.
Coriander Leaf 1/4 cup
Chopped Onion 1/2 Onion
Cheddar Cheese 1/2 Onion
METHOD:
    Pre heat over in 350 F for 10 mins. Meantime, cut bread slices diagonally. Add on some shredded cheddar cheese on top of the slices, again add some chopped coriander leaf, onion and green chillies here and there. All set now. Place it in over for 10 to 15 mins. Once done serve hot. So simple is it !

Cranberry cake

     Its my long time goal (!) to bake a PERFECT cake, so far have tried plenty of variations in cake but last week was my PERFECT day to bake my PERFECT CAKE, i guess. Yes, finally i acheived it !!! Yiiiipppeeee! Without any further delay directly going to the ingredients and methods !
ALL YOU NEED:
Maida 1 cup
Rava 1/2 cup
Sugar 3/4 cup
Dried Cranberry 1/4 cup
Baking soda 1/2 tsp
Baking powder 1 tsp
Olive oil 2 tbsp
Curd 1/4 cup
Milk 2 tbsp
Salt Pinch
METHOD:
     Take a wide bowl, add all the dry ingredients, mix well. You can sieve it, if possible. Now add all the wet ingredients, give a hard stir. Add required amount of milk, if the batter is too thick. Meantime preheat oven at 190 C for 10 mins. Now grease the cake pan with olive oil and pour cake batter and bake in oven for 30 to 35 mins in the same temperature.
    Once 3/4 batter got baked, grease the top with milk or oil just to avoid the dryness since we added rava. After 30 mins, insert a tooth pick and check if its coming out clean. If yes, your cake is ready and allow it cool and enjoy !

My second Bake !

     I am a big addicted person for baked dishes. Nowadays, my passion towards Baking becoming like Addiction. Yes, reason behind is, am not familiar about my microwave usage/functionality, which we got as gift. That too, am having IFB with lot of in-built options. I am still under R&D and the manual which they have offered has NIL instruction about handling/preparation. So, am struggling to work with it. Most of the time, it is untouched :( You wont believe me, its going to be 1 year since we are owning it but till date, it have used it thrice :( I am much much eager to use it but i am HELPLESS. Eventhough i am novice in Baking somehow tried two bakes, one is Vanilla Tutti Fruity cake and another is Eggless Banana Dates sponge cake. He he... Nice name is it ? ;) Here comes, tentatively tried cake method for yur views


ALL YOU NEED:
Maida Flour 2 cups
Banana 2 Nos.
Dates 6 Nos.
Baking Powder Pinch
Vanilla Esscence 1 spoon
Powdered Sugar 1/2 cup
Butter 4/5 spoons

METHOD:
     Grind Banana and Dates together to a fine paster. Let it sit for a while. Take a wide bowl, Seive Maida. Add pinch of baking powder, powdered sugar to the Maida. Add butter and Vanilla Essence. Mix it well, until it becomes sticky. Now add grinded banana and dates mixture. Give hard stir until it mixes well with the Maida. Now grease the microwave pan with the better. Pour the mixture into the greased pan. Keep pan into the microwave and set the "Cakes" option and i kept the timer for 10 mins. Funny moment was, in that 10 mins, i opened and checked the pan for morethan 10 times. Bit scared whether it will get burned... :P

    After 10 mins, take out the pan and allow it to cool for 5 minutes. After 5 minutes, just inserted a tooth pick and it came out clean. Whoa!! I am was overwhelmed and was just jumping from top to floor to taste my second bake. I am much much happy with the taste but if i know the proper procedure, i can get rid off my fear :( thats the drawback with my method.

Note:Selecting "Cake" option and setting timer, all these are done tentatively. As i dont know the exact procedure. :( (You know, how much i feel sad, when i type this line)

Chilly cheese toast
