Mushroom Peanut Gravy

     It was a dinner time, thought of making chapati for dinner but what to do for sidedish. Asual opened the fridge and was standing infront of time for long time. Finally, got some 5 mushrooms, half capsicum and some fresh groundnut. Decided to do some dish using those leftovers. Added all the inhouse and in hand masalas and here come the outcome, which had heavenly taste.


ALL YOU NEED:
Mushroom 5 Nos.
Peanut 1/2 cup
Ginger Garlic Paste 1 spoon
Coriander Powder 1 spoon
Chopped Coriander 3 spoons
Turmeric Powder Pinch
Chilly Powder To Taste
Chopped Tomato 1 No.
Chopped Onion 2 Nos.
Garam Masala 1/2 spoon
Curry Leaf 6 Nos.
Cumin Seeds 1/2 spoon
Capsicum 1/2 cup
Mustard 1/2 spoon
Salt To taste
Oil 2 spoons
To Grind:
Coconut 1/4 cup
Fennel Seeds 1 spoon
Cardamon 1 No.

METHOD:
     Grind the items listed under "To Grind" in a mixer by adding few amount of water. Now heat a spoon of oil in a pan, add mustard, cumin seeds. Now add curry leaf, chopped onion, saute it by adding pich of salt. Once done, add ginger garlic paste, when the raw smell goes off, add chopped tomato, saute for 5 mins, now add peanut and mushroom, saute for 2 mins. Now add turmeric powder, chilly powder, coriander powder and garam masala, keep on sauting until raw smell goes off. Once done, pour the grinded mixture, add 1/4 cup of water, adjust with salt. Allow it boil until it reached semi gravy consistency, now add diced capsicum, saute for 5 mins. All done, put off the flame and garnish with chopped fresh coriander leaf. Now serve with some roti or chapathi.

Kadai Paneer

     Once upon a time (:P), am a big big hatred fan of all milk products especially PANEER, but nowadays somehow it caught my taste bud tightly. Yes, these days me become a huge fan of PANEER. You know, me started adding/preparing new dishes using paneer. Last week it was Cashew Paneer Masala and this week Kadai paneer in my dinner recipe. That too me the one who completely gobbled the entire quantity ?!?! How crazy me :P fine, without making any further delay, do check my Kadai Paneer version.


ALL YOU NEED:
Chopped Onion 1 cup
Tomato Puree 3/4 cup
Paneer Cubes 1 cup
Diced Capsicum 1 cup
Ginger Garlic Paste 1/2 spoon
Turmeric Powder Pinch
Chilly Powder 1/2 spoon
Coriander Leaf To Garnish
Green chilly 1 No.
Garam Masala 1/2 spoon
Cumin Seeds 1/2 spoon
Salt To Taste
Oil 2 spoons
METHOD:
     Soak Paneer cubes in hot water and let it sit for a while. Heat 2 spoons of oil in a pan, add cumin seeds, green chilly and chopped onion, saute ti by adding pinch of salt. Now add ginger garlic paste, saute again for 2 mins. Now pour the tomato puree, mix well with onion mixture. Once done, add chilly powder, coriander powder, garam masala powder, turmeric powder and salt again. Saute by sprinkling some water, let it cook until raw smell goes off. Meantime, strain the paneer cubes from hot water. Once the masala is ready, add capsicum cubes and paneer cubes, saute well until the masala coats well. Adjust salt now. Until it comes to thick consistency, let it be in simmer flame. Once done, transfer it to serving bowl and garnich with coriander leaf.

Note: You can also add "Tomato Ketchup", if you are a sweet and spicy lover.

Quinoa Spinach Chapathi

    Few days back i bought a frozen "Quinoa Spinach Tikki" which was tempting me to buy that. As soon as i back from shopping, i was so eager to taste. But i didnt liked the taste personally. I was totally fed up. Still, i don't feel like wasting it. Suddenly i got an idea to add in all dough/ batter. From then on, am adding it while making poori, chapathi, dosa etc. etc. :) now thought of sharing it to you all.


ALL YOU NEED:
Wheat Flour 2 cups
Quinoa Spinach Tikkis 3 Nos.
Water To Knead
Salt To Taste
Oil 2 spoons


METHOD:
    Knead wheat flour with all the ingredients under "All You Need" except oil. Make it as soft chapathi dough. Add a spoon of oil, at the end of the kneading and allow it to sit for 30 minutes. After 30 mins, make it as small round shaped balls and roll it using rolling pin and heat a tawa, add a spoon of oil, place the rolled chapathi dough and toss it on both sides. Serve hot with raitha or any curry.

Chapathi Noodles

     I had some 5 left over chapathi, i was not in mood to have it as plain chapathi, just thought of prepare it with some variations. Immediately 2 dishes flashed in my mind, one is Kaima chapathi and another is Chapathi Noodles. Finally decided to go with Chapathi Noodles, since i had some veggies too. Really it came out very well. I thoroughly enjoyed with ketchup. Yum ! Yum !!
                            

ALL YOU NEED:
Chapathi 5 Nos.
Chopped Onion 1 No.
Chopped Garlic 6 Nos.
Mixed Veggies 1/2 cups
Spring Onion 1/2 spoon
Pepper Powder 1 spoon
Ketchup 2 spoons
Salt To Taste
Oil 2 spoons


METHOD:
     Do thin slice all the chapathi. Keep it aside. Take a wide pan, heat 2 spoons of oil. Once done add chopped garlic, chopped onion along with pinch of salt. Once its sauted well, add all the veggies, saute well until it gets cooked. Once all the veggies cooked, add thin sliced chapathi along with ketchup. Do fine sauting until veggies and chapathi gets mixed up. As a final note, add chopped spring onion and toss for 1 min and put off the flame and enjoy with ketchup and curd.

Aloo Paratha

     It was my saviour during my pregancy time. Yes, most of the days i dont feel like to cook due to morning sickness. So, near my house, there was a northindian tiffen stall where i'll get these paratha that too very hot with all perfect side dish. From that time, i want to try this at home. Now i got the time after 3 years :P To e frank, my first try was total disaster but this time Yiiippppeee.... i somehow got the perfect shape i guess ! Here comes for your views !

       

ALL YOU NEED:
Wheat Flour 2 cups
Water Required
Salt Required
Oil 1 spoon

For Stuffing:
Boiled Potato 3 Nos.
Chopped Onion 1 No.
Chopped Green chilly 2 Nos.
Chopped Ginger 1/2 inch
Chopped Garlic 6 Nos.
Turmeric Powder Pinch
Salt To Taste
Oil 1 spoon
METHOD:
     Take a wide pan, ad wheat flour and required salt. Knead it to a perfect dough by adding required water. Once done, add a spoon of oil and again knead and allow it to sit for a while.

    Now keep a pan, add a spoon of oil, once its gets heated add chopped onion, chopped green chillies, chopped garlic, chopped ginger and do sauting along with pinch of salt. Now add mashed potato, give hard stir until it mix well with the onions. Adjust with salt. Don't add water. Let it cool down. Apply oil on chapathi roller, take a ball shaped dough, roll it partially, apply oil/flour if it sticks to the roller. Now take a small ball shaped potato mixture. Place it in the centre and cover it with the dough. Now again roll it to paratha shape. Once done, place it on a tawa, add oil to it sides and toss it until it gets cooked. Now serve hot with cucumber raitha.

Mint Chapathi

     During the same Diet week mentioned in my previous posts (Here and Here), i prepared this Mint/Pudhina Chapathi. Its my long time thought to prepare some stuffed or mixed chapathi. So, tried Aloo paratha one day but that went as a disaster :P so tried with this Mint chapathi, i got super dooper flavored chapathi but it was bit hard :( Still, I packed it for my lunch with simple raitha as my side dish. When i opened my box during my lunch time, OMG ! what a smell !!! That was super flavored and it tasted heavenly too... Literally enjoyed having that flavored chapathi with my team mates


ALL YOU NEED:
Wheat flour 1 cup
Mint Leaf Handful
Salt Pinch
Water 3/4 glass
Oil 1 spoon

METHOD:
     Finely chop the mint leaf and keep it aside. Take a wide bowl, add cup of wheat flour, pinch of salt. Mix it well. Add chopped mint leaf, add little amount of water and make it as fine dough. Once done, add a spoon of oil, give a fine mix. Let it sit for a while. Now press it as chapathi and toss in tawa and serve with some suitable curry or raitha.
